Ceglie’s Biscuit Consortium

Biscuits with all their variants, are part of the gastronomical heritage of a village: in the past they were always present on the tables of the houses of Ceglie, especially during the festivities periods or on the weddings banquets or on the religious celebrations. But, as always happens, with the passing of time, the ingredients genuineness was lost and the preparation methods that in the beginning was really complicated became simplified. Just for the safeguard of these old values the 23rd of December 2008 was created the Consortium, also supported by the Presidio Slow Food. The regulation of the Presidio in fact provides that all the ingredients must have local origins, as well as eggs and citruses; thanks to a country still rich of biodiversity and high quality fruits. So local almonds, especially of the Ceglie selection (du riviézz, that literally means “of the robin”, cause it is so tender and juicy that is the favourite food of this bird), capa di serpa cherries, mascialora, cirasona and local grapes for the marmalade stuffing.
